Christmas Cream Cheese Mints

Ingredients

  • 4 oz cream cheese softened
  • 4 cups powdered sugar divided
  • 1/2 tsp mint extract
  • 1 tbsp milk
  • 1/4 cup holiday sprinkles divided
  • 1/2 cup granulated or powdered sugar

Instructions

  1. Using a hand mixer on low combine cream cheese and mint extract in medium mixing bowl.
  2. Blend in 2 cups powdered sugar and milk until smooth. DO NOT OVERMIX.
  3. Add 1 cup powdered sugar and 2 tablespoons sprinkles. Mix on low.
  4. Knead in remaining cup of powdered sugar using hands until dough is consistent and smooth. If you dough is still too sticky add powdered sugar until its no longer sticky and can be formed into a tiny ball.
  5. In a separate small bowl combine sugar and 2 tablespoons sprinkles.
  6. Shape dough into 3/4-inch balls and roll in sugar combination.
  7. Place balls onto a baking sheet.
  8. Refrigerate for at least 30 minutes.
  9. Remove from refrigerator and ?atten gently with a fork.
  10. You can now leave mints on the counter to harden slightly and then move to an airtight container. Store mints in refrigerator.

Depression Era Chocolate Cake Recipe

Ingredients:

  • 3 cups flour (Either spelt or unbleached all-purpose or a combination of both)
  • 2 cups organic cane sugar
  • 1 tsp sea salt (you can find my favorite salt here)
  • 6 Tbs cocoa powder
  • 2 tsp aluminum-free baking soda
  • 1/2 tsp ground ginger
  • 3/4 cup coconut oil melted and cooled
  • 2 tsp pure vanilla extract
  • 1 Tbs strong coffee (or you can use instant coffee dissolved in the water)
  • 2 cups warm temperature water
  • 2 Tbs apple cider vinegar

Directions:

  1. Preheat oven to 375 degrees and grease and flour two 9 inch round cake pans or one 13 x 9 inch pan.
  2. In a large mixing bowl combine flour sugar salt cocoa powder baking soda and ginger stirring to mix well.
  3. Add melted and cooled coconut oil vanilla and warm water. (If using instant coffee dissolve the coffee into the warm water first making sure it’s fully dissolved.) Stir well to combine.
  4. Add coffee and apple cider vinegar stirring well to make sure there are no lumps in the batter. The batter will foam up a bit as the baking soda reacts with the acid in the vinegar and the coffee.
  5. Pour batter into cake pans and bake at 375 degrees for about 25 minutes or until a toothpick inserted in the center comes out clean. (If you use a 13 x 9 pan rather than two cake pans the cake might take a bit longer to bake through.)

Best Lemon Blueberry Cake Ever

IngredientsLemon Blueberry Cake

  • 2 1/4 cups cake flour*
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter**
  • 1 1/2 cups granulated sugar
  • 2 tablespoons lemon zest
  • 2 teaspoos vanilla extract
  • 3 large eggs
  • 1/4 cup lemon juice freshly squeezed
  • 2/3 cup buttermilk
  • 1 1/2 cups blueberries fresh or frozen
  • 2 teaspoons cake flour

Cream Cheese Frosting

  • 1/2 cup unsalted butter softened
  • 8 oz brick-style cream cheese
  • 1 teaspoon lemon juice
  • 3 – 3.5 cups powdered sugar
  • 1 tablespoon cream as needed

Instructions

  1. Preheat the oven to 350F degrees. Grease and flour a 9×13 inch cake pan.
  2. In a medium bowl sift together the flour baking powder and salt.
  3. In a large bowl beat together the butter sugar and lemon zest until fluffy. (About 2-3 minutes).
  4. Add in the vanilla extract and beat in the eggs 1 at a time.
  5. In a liquid measuring cup whisk together the lemon juice and buttermilk.
  6. With the mixer on low speed beat about 1/3 of the flour mixture into the butter mixture followed by about 1/3 of the milk mixture.
  7. Continue the process of alternating between the flour & milk until just combined turning off the mixer and scraping down the sides of the bowl as necessary.
  8. Toss the blueberries with the 2 teaspoons of flour then gently fold into the batter with a spatula.
  9. Pour the batter into the prepared pan. Bake for 25-30 minutes or until an inserted toothpick comes out clean.

Cream Cheese Frosting

  1. Beat the butter until soft then mix in the cream cheese.
  2. Add in the lemon juice and mix in 3 cups of the powdered sugar starting with the mixer on low speed and then turning up to medium as it starts to combine.
  3. Beat in 1 tablespoon of whipping cream and then mix in the rest of the powdered sugar as necessary going little by little and adding more cream if needed.
  4. Frost the cooled cake and optionally decorate with blueberries and lemon slices.

Raspberry Fool

Ingredients

  • 1½ cups fresh ráspberries
  • 4 tbsp. gránuláted sugár divided
  • 1 cup heávy whipping creám
  • ½ tsp. vánillá
  • Ádditionál ráspberries for gárnish (optionál)
  • Mint for gárnish (optionál)

Instructions1. In á medium bowl combine the ráspberries with 2 tbsp. of sugár. Let the mixture stánd for 10 minutes. Pláce 1 cup of the ráspberry mixture into á food processor or blender. Cover ánd process until the berries áre pureed. Stir the pureed fruit báck into the fruit in the bowl. Cover ánd refrigeráte until cold ábout 2 hours.2. Meánwhile combine the heávy whipping creám remáining 2 tbsp. sugár ánd vánillá in á chilled mixing bowl. Beát with án electric mixer using chilled beáters on medium speed until álmost stiff peáks forms. Cover ánd refrigeráte until reády to prepáre the desserts.3. With á rubber spátulá gently fold the fruit into the whipped creám mixture being cáreful to leáve some visible swirls. Divide the mixture between 4 to 6 smáll dessert glásses. Best Honey Butter Fried Chicken

INGREDIENTSFRIED CHICKEN:

  • 2 lbs bone-in chicken
  • 6 cups water
  • 1/4 cup salt
  • 1 tsp granulated garlic
  • 1 tsp onion powder
  • 1 tsp paprika
  • 4 tbsp all purpose flour
  • 2 tbsp cornstarch
  • 2 eggs
  • salt and pepper to taste

HONEY BUTTER SAUCE:

  • 4 tbsp butter
  • 1/4 cup honey
  • 2 garlic cloves
  • pinch of red crushed pepper
  • 2-3 dried red chilies optional
  • salt to taste

INSTRUCTIONS

  1. In a large bowl combine the water and salt.
  2. Place the chicken in the bowl and refrigerate for a minimum of one hour.
  3. Using a paper towel pat dry the chicken and let it come to room temperature.
  4. In a large bowl combine the all-purpose flour cornstarch granulated garlic onion powder paprika eggs a pinch of salt and pepper to taste.
  5. Place the chicken in the flour-egg mixture and let it sit for about 20 minutes.
  6. Preheat the oven to 375 degrees F.
  7. Fry the chicken for 8-10 minutes on each side.
  8. Bake the chicken in the oven for an additional 10-15 minutes or until the chicken is fully cooked through.
  9. To make the honey butter sauce melt the butter in a large skillet over medium-high heat.
  10. Stir in the garlic and cook until fragrant.
  11. Add the honey dried chilies and red crushed pepper. Stir and season with salt.
  12. Let the sauce thicken and then place the crispy chicken in the skillet and coat with the honey butter sauce.
  13. Serve with warm butter biscuits and enjoy!

Best Recipe No Bake Lemon Pie

  • 1 1/2 cups gráhám crácker crumbs

Lemon Cheesecáke Filling

  • 8 oz creám cheese softened
  • 2 cups whole milk
  • 3.5 oz instánt lemon pudding mix
  • 1 tbsp lemon zest

Whipped Creám Topping

  • 1 cup heávy creám cold
  • 2 tbsp powdered sugár
  • 1 tsp vánillá extráct
  • 1 tbsp lemon zest
  • lemon zest ánd slices ráspberries ánd mint to gárnish pie

Instructions

  1. Gráhám Crácker Crust
  2. Lightly spráy á 8 – 9.5 pie pán with cooking spráy. Set áside.
  3. Mix gráhám crácker crumbs sugár ánd butter in á smáll bowl. Press the crumb mixture into the prepáred pie pán. Use the bottom of á meásuring cup to reálly press the crust down. Chill pie crust for át leást 30 minutes before filling.

  6. Ádd pudding mix ánd beát until creámy ánd combined.

Peanut Butter Balls

INGREDIENTS

  • 1 cup (250 grams) creamy peanut butter
  • 6 tablespoons (85 grams) unsalted butter softened to room temperature
  • 2 cups (240 grams) powdered sugar
  • 1/2 teaspoon pure vanilla extract
  • 1/8 teaspoon salt
  • 12 ounces semi-sweet chocolate chopped

INSTRUCTIONS

  1. Line a large baking sheet with parchment paper. Set aside.
  2. In a large mixing bowl using a handheld mixer beat the peanut butter and butter together until well combined. Add the powdered sugar vanilla extract and salt and mix until fully combined stopping to scrape down the sides of the bowl as needed.
  3. Using a one tablespoon measuring spoon or cookie scoop scoop the peanut butter mixture roll into balls and place on the prepared baking sheet. Transfer the baking sheet with the peanut butter balls to the freezer for 20 minutes.
  4. Place the chopped chocolate in a medium-sized microwave-safe bowl. Microwave in 20-30 second increments stirring well after each increment until completely melted and smooth.
