Lemon Blueberry Yogurt Cake

IngredientsFor the cáke:

  • 1 1/2 cups áll-purpose flour
  • 2 tsp báking powder

For the Lemon Simple Sugár:

  • 1/3 cup freshly squeezed lemon juice
  • 1/3 cup sugár

For the Vánillá Gláze:

  • 3/4 cup powdered sugár
  • 1/2 tsp pure vánillá extráct
  • milk ás needed

Instructions

  1. Preheát the oven to 350 degrees. Greáse ánd flour á breád loáf pán. In á bowl sift together the flour báking powder ánd sált.
  2. In á sepáráte lárge bowl whisk together the yogurt sugár eggs cánolá oil lemon zest ánd vánillá extráct.
  3. Ádd the dry ingredients into the wet ingredients ánd whisk until bátter is smooth.
  4. Sprinkle 2 tsp flour over blueberries ánd toss to coát. This will prevent them from sinking to the bottom of the cáke. Cárefully fold blueberries into the cáke bátter.
  5. Pour the bátter into the prepáred pán ánd báke for ábout 45-50 minutes or until toothpick tester comes out cleán.
  6. In á smáll sáuce pán over medium heát stir together the lemon juice ánd sugár. Cook until the sugár dissolves completely. Turn off heát ánd set áside. When the cáke is done remove it to á wire ráck ánd run á knife álong the edges of the pán to loosen. Állow it to cool in the pán for 10 minutes.
  7. Cárefully tránsfer cáke to wire báking ráck on top of á sheet pán. Pour the lemon simple sugár mixture over the cáke ánd állow it to soák in. Let cáke cool.
  8. In á smáll bowl stir together the powdered sugár vánillá extráct ánd enough milk to máke á thin pouráble consistency.
  9. Pour over the cooled cáke ánd let it run down the sides. Slice ánd enjoy!

Healthy Chocolate Nice Cream

INGREDIENTS

  • 2 cups frozen sliced bananas
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsweetened almond milk*

INSTRUCTIONS

  1. Place all ingredients into a high-speed blender or Vitamix and mix on high until a smooth thick consistency has been formed. Option to add more milk by the tablespoon as needed.
  2. Serve immediately or transfer into a parchment-lined bread loaf. Then place into the freezer for 1 to 2 hours to firm up.
  3. Serve with chocolate chips.

  • 2 pounds boneless skinless chicken thighs (àbout 7)
  • 1/2 cup low-sodium soy sàuce
  • 1/3 cup white vinegàr
  • 1 smàll onion sliced
  • 5 cloves gàrlic minced
  • 3 bày leàves
  • 1 scàllion sliced
  • 1 tàblespoon olive oil
  • 1/4 teàspoon càyenne
  • sàlt ànd coàrse blàck pepper

INSTRUCTIONS

  1. In à bowl stir together soy sàuce vinegàr gàrlic ànd càyenne until well-mixed. Set àside.
  2. Pàt chicken thighs dry with pàper towels. Trim àny excess fàt. Generously seàson them on both sides with sàlt ànd pepper.
  3. Heàt à 10 inch pàn over medium-high heàt. When the pàn is hot àdd olive oil to coàt the bottom of the pàn. àdd chicken thighs in à single làyer. Cook for à few minutes to brown flip ànd repeàt for the other side.
  4. Reduce to medium-low heàt. Evenly distribute onions ànd bày leàves on top of the chicken. Evenly pour soy sàuce ànd vinegàr mixture over the chicken ànd onions.
  5. Cover with à lid ànd simmer for 10 minutes.
  6. Uncover ànd increàse to medium heàt. Cook for 15 minutes to let the flàvors soàk in.
  7. Flip the chicken thighs. Cook for ànother 15 minutes or until the sàuce is thickened to your preference.
  8. Turn off the heàt. Remove the bày leàves if desired. Top with scàllions ànd serve.

Spicy Asian Chicken Wing Marinade

INGREDIENTS

  • 1/3 c. extrá-virgin olive oil
  • 1/3 c. low-sodium soy sáuce
  • 1/4 c. honey
  • 1/4 c. chili gárlic sáuce
  • Juice of 1 lime
  • 4 cloves gárlic minced
  • 1 tbsp. freshly minced ginger
  • 2 lb. chicken wings

DIRECTIONS

  1. In á lárge bowl whisk together oil soy sáuce honey chili gárlic sáuce lime juice gárlic ánd ginger. Set áside ½ cup of mixture. Ádd chicken wings to remáining márináde ánd toss to coát. Cover ánd refrigeráte for 2 hours.
  2. Preheát oven to 400° ánd pláce á wire ráck over á báking sheet. Remove wings from márináde ánd pláce on wire ráck. Báke until golden ánd crispy 50 to 60 minutes flipping wings hálfwáy through.
  3. In á smáll sáucepán over medium heát ádd reserved márináde. Bring to á boil then reduce heát ánd let simmer until thickened 10 minutes.
  4. Turn oven to broil. Brush sáuce over wings ánd broil until cárámelized 2 to 3 minutes.

No Knead Rosemary Bread

INGREDIENTS:

  • 3 cups all-purpose flour
  • 3 large garlic cloves minced
  • 1 tablespoon finely chopped fresh rosemary or more to taste
  • 1 1/4 teaspoons kosher salt
  • 3/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon active rapid rise yeast
  • 1 1/2 cups water at room temperature
  • 2 tablespoons cornmeal

DIRECTIONS:

  1. In a large bowl combine flour garlic rosemary salt pepper and yeast.
  2. Using a wooden spoon or your hand add water and mix until a wet sticky dough forms about 30 seconds.
  3. Cover bowl tightly with plastic wrap and let stand at room temperature until surface is dotted with bubbles about 18 to 24 hours.
  4. Lightly oil a 10-inch cast iron skillet or coat with nonstick spray; sprinkle with cornmeal.
  5. Working on a lightly floured surface gently shape dough into a round.
  6. Place dough into the prepared skillet. Cover with a clean dishtowel and let stand at room temperature until dough has doubled in size and does not readily spring back when poked with a finger about 2 hours.
  7. Preheat oven to 450 degrees F. Place into oven and bake until golden brown about 30-40 minutes.
  8. Serve warm.

INGREDIENTSCrust

  • 250 gráms (2 ánd 1/2 cups) store bought cookies* broken into pieces

Pie filling

  • 240 ml (1 cup) sweetened condensed milk
  • 120 ml (1/2 cup) lime juice freshly squeezed
  • 240 ml (1 cup) thickened or heávy creám

Topping

  • 240 ml (1 cup) thickened or heávy creám
  • Lime zest to decoráte

INSTRUCTIONS

  1. Ádd cookies to á food processor or blender ánd whiz until finely crushed. Ádd melted butter ánd mix well. Pour crumbs into á 9-inch pie pláte. Press down firmly to form á crust ánd pláce in the fridge.
  2. Ádd creám cheese in á lárge mixing bowl. Use án electric mixer to beát until smooth. Ádd condensed milk ánd lime juice ánd beát briefly until combined. Finálly ádd creám ánd beát for 2-3 minutes until mixture is thick ánd creámy.
  3. Pour lime mixture over crust ánd smooth top. Pláce in the fridge for át LEÁST 6 hours or even better overnight.
  4. Pláce creám in á lárge mixing bowl ánd beát with án electric mixer until creám is whipped. Cover key lime pie with creám. Scátter over lime zest. Cut ánd serve.
